Every choice in the cellar runs back to the same five vows. They are simple, stubborn, and very old.

The Ganchengzi block sits on alluvial gravel washed down from the Helan range. The stones force the vine to dig, pulling minerality from twenty metres below.

Each bunch is cut by hand at first light, sorted twice, and destemmed gently. We never rush a vintage we cannot repeat.

Open-vat ferment, malolactic in barrel, then 18 months in 300L French and American oak. Patience is the only additive we trust.

40°C days, 12°C nights. The shock builds skins, layers aromatics, and gives us tannins that hold their shape long after the cork is pulled.

Native yeasts. No fining. Minimal sulphur at bottling. We let each barrel arrive at its own conclusion, then we listen.
